Banana Bread Recipe
From my last vlog...
I love a good banana bread and I’ve been on a mission to make a semi-healthier version with more protein and fiber and I think I’ve finally done it!! This was featured in my last vlog :)
This recipe uses coconut oil, greek yogurt, maple syrup, and oat flour and makes the most wonderful, not too sweet, banana bread (but don’t skimp out on the dark chocolate chips!!)
I also love spreading maple butter, peanut butter, or regular butter on a big slice!
Ingredients:
wet
3 spotty ripe bananas (the riper the better!)
2 room temperature eggs
1/2 c. maple syrup
1/4 c coconut oil (melted)
1/2 c full fat greek yogurt
dry
1 c flour
3/4 c oat flour
1/3 c chocolate chips (or however much you like)
1 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
1 tsp salt
Recipe:
Preheat oven to 350 F
Mash ripe bananas in a bowl, add the rest of the wet ingredients and whisk to combine
Mix dry ingredients in a separate bowl, then add to wet ingredients
Mix until combined, fold in chocolate chips (if using)
Line a 9in x 5in Loaf Pan with parchment paper and pour batter in
Bake at 350 F for about 50-60 minutes or until a toothpick comes out clean
